Steak and kidney pie
This recipe does take time
but it can all be prepared ahead of time
and as a beautifully made traditional
dish it is worth it Lindsey Bareham Recommend?
Serves 6
Prep: 1 ½ hours, plus 1 hour chilling
Cook: 3 hours (stock: 3 hrs plus 24 hrs chilling)
Ingredients
For the beef stock:
1 kg small beef or veal bones
1 tbsp vegetable oil 1 leek
1 large onion
3 medium carrots
1 large flat mushroom
3 stalks celery
2 bay leaves
A few sprigs thyme,
sage and parsley
6 peppercorns
1 tsp salt 3 litres water
For the pie filling:
3 medium onions
5 large flat mushrooms
1 kg chuck or other lean stewing steak
500g ox kidney
2 tbsp plain flour
50g lard or 3 tbsp vegetable oil
500ml beef stock
1 tsp Worcestershire sauce
Herb bundle: 4 sprigs thyme,
1 sprig rosemary and 1 bay leaf
