1 lb. green beans, washed and trimmed
1 roasted red pepper, seeded, skinned and diced
¼ cup olive oil
1 tablespoon whole grain mustard
3 tsp white balsamic vinegar
½ tsp black pepper
¼ tsp salt 3 tbsp fresh parsley, minced
Serves 6-8 side salad portions.
